You will get a lot of different opinions on the subject of the best way to grill pork tenderloin – not all of them will be wrong. For us though the best way is also one of the simplest, the 7-6-5 method. Rather than go super slow & low or just straight grilling the tenderloin over high heat, this method uses an extended rest in the hot grill.
The 7-6-5 Pork Tenderloin:
1.) Remove the silver skin. As with all pork tenderloins make sure it has been properly butchers and if it has not remove the silver skin. This connective tissue wont render off and will be chewy so removing it before you cook or season the meat is key. This also holds true for Beef and lamb tenderloins.
2.) Season the meat. As with all meat a good aggressive seasoning and resting while it comes up to room temperature is key to flavorful meat. I typically go with Salt & Pepper, and some sour of a wet mustard rub. Once seasoned let it rest on the counter for a half hour or so.
3.) Pre-Heat the grill. it should be noted for this recipe we are specifically discussing using a gas grill where you can turn the heat off. Once heated through oil the grill grates to help prevent the pork tenderloin from sticking.
4.) Cook the meat! In a piping hot grill (500+ degrees) place the tenderloin in the middle and close the lid. Wait 7 minutes, open and flip the pork. Then wait 6 minutes, open and flip again. Then close the lid and kill the heat. Let the pork sit in the hot grill for 5 more minutes.
AND… you are done.
Now pull the pork tenderloin from the grill and rest it as you would any normal piece of meat. Then slice and serve. To us this is simplest and honestly the best way to grill pork tenderloin.
