Quick sides – Oven Roasted Asparagus

Another super simple side in the same vein as our Sugar Snap Peas Recipe.  This is also a 4 ingredient side with the asparagus being the only real player.  For this oven roasted asparagus recipe you’ll need, no surprise asparagus.  And like the sugar snaps just: olive oil, kosher salt, and fresh ground pepper.

 

How to make out oven roasted asparagus:

  • Pre-heat your oven to 450 degrees.
  • Trim asparagus.
  • Place on a rimmed baking sheet.
  • Coat with olive oil, salt, and pepper.
  • Toss to mix.

Once you are here and your oven is close to temperature, put the asparagus in for 10-15 minutes until starting to brown.  When roasting vegetables like this a perfect pre-heat is not necessary close enough is good enough.  This will save you time and a tiny bit of energy. One warning – If things look like they are drying out and getting stringy pull the asparagus asap the goal is to caramelize and sweeten them up not to desiccate them.  When they look done…they are.

Remove and plate the oven roasted asparagus with your other dishes.  Making sure to do this quickly.  These are very tasty hot but go down hill pretty quickly as they cool off, especially if they are a little over done.
