This is one of my absolute favorite sides because of how impossibly simple it is to make these sugar snap peas and how flavorful they turn out. 4 total ingredients a hot pan and a couple minutes are all you need this comes out so fast you can make it while your steak/fish/what have you is resting with time to spare.
What you need:
- Olive oil.
- Salt.
- Pepper.
- Trimmed Sugar Snap Peas.
Heat some oil in the pan, which the oil is heating grind in a bunch of pepper. Once the oil is shimmering (not smoking) toss in the sugar snap peas. Saute them hot and fast so they brown, this will take a couple minutes at most over high heat. Turn the heat off. The sprinkle liberally with either kosher or finishing salt grind some more fresh pepper over the peas. Remove from the pan and plate the sugar snap peas. Start to finish this should take you under 10 minutes – which is at least how long you should be resting steaks.
These sautéed sugar snaps are a great “bail-out” side dish. I use it frequently when other things have gone awry, if i burned something, or simply didn’t like how it turned out. Quick simple, pretty health and lots of flavor these are tough to beat.
