One other major major pointer – make sure you do not over fill your deep fryer. An even more common accident than the exploding bird when deep frying a turkey is a grease fire. That fire is typically caused by the cook not accounting for the volume of the bird in the pot when filling it with cooking oil. Once the turkey is added the super heated oil gets displaced and spills out of the pot igniting. In this video that is the other large flareup you see.
